Masa in the kitchen:
Masa Lista flour is perfect for making homemade tortillas and is actually the traditional flour of choice for this in Mexico and other parts of South America.
How to use:
Combine two cups (loose measure) of Masa Lista flour with 1/4 teaspoon of salt (optional) and 1 cup of water. Mix thoroughly for about 2 minutes to form a soft dough. If the dough feels too dry, add move water (one tablespoon at a time).
Divide the mix into 16 equal balls and cover with a damp cloth to keep moist. Line a tortilla press with two sheets of plastic wrap and place each ball between the plastic then press until the tortilla meausres 5 – 6 inches in diameter. Carefully peel off the plastic wrap.
Cook tortilla’s one at a time for 5 seconds on each side in a heavy based saucepan or skillet on very high heat. Once cooked cover with a cloth napkin to keep soft and warm. Enjoy.
