Organic Alkalized Cocoa Powder is obtained from the grinding of ripe, organically grown and roasted cocoa beans (Theobroma cacao). It is absolutely delicious and a favourite in store.
This process of alkalising (also known as the Dutch Process), is the process of making the ground cocoa beans less acidic (raising the pH) prior to pressing out the cocoa butter. In the Dutch Process, potassium carbonate is used to neutralize some of the acid in cocoa. Not only does this improve the flavour, but it also darkens the cocoa to a reddish brown color and makes it easier to mix into most liquids.
This fine organic cocoa powder is a classic chocolate for baking, smoothie making and sprinkles, and makes the most delicious hot chocolate around.
