Organic black turtle beans, also known as black beans, Spanish or Mexican beans, are thought to have originated in southern Mexico and Central America. Beneath their jet-black coating is a cream-colored flesh with a unique, almost mushroom-like flavor that is perfect for making Mexican bean dishes, adding to a hearty soup or tossing though a salad. As well as being amazingly versatile in the kitchen they also have a wide range of nutritional advantages and is thought by many to be a superfood. The rich and shiny black colour is due to the high levels of 3 main types of flavenoids (anti-oxidants). These flavenoids have been widely studied and have been found to be highly valuable as they can slow-down aging, protect cells from damage and reduce risk of illness. These super beans are a great source of folate, B1, magnesium, digestive fibre and protein.
Cooking with Turtle Black Beans
With most beans and legumes its important to soak first overnight in the fridge, this will reduce cooking time and any digestive upsets. Add 3 cups of water to one cup of beans, bring to the boil for a few minutes then reduce to a simmer for about 1.5 hours or until tender. The great flavour and texture of these beans makes them very easy to use. Try adding fresh tomatos and herbs and serve on top of a baked potato; cook them into a chilli black bean soup with veggies or mash them into a quick and healthy dip with garlic, coriander and olive oil.

How to cook organic black beans: Soak overnight, drain and replenish with fresh cold water. Place on stove and simmer, tilting the lid slightly to allow steam to escape, allowing time to cook for up to 90 minutes, or until tender.
