Organic Khorasan Flour
Organic Khorasan (Kamut) flour comes from an ancient grain similar to that of the wheat grain (but not quite the same). The grain is twice the size of modern-day wheat and is known to be more readily digestible due to a slightly lower gluten content. It is also said to contain 20–40% more protein, be higher in lipids, amino acids, vitamins and minerals, and a “sweeter” alternative to modern day wheat.
Khorasan is known for it’s rich nutty flavor.
Note: This flour is roller milled, otherwise known as a white flour that no longer contains the fibre component.

Khorasan flour is great for breadmaking and in particular for making sourdough. It contains strong proteins with good stretchability resulting in a bread that is well aerated and spongy.
Interesting Facts About Khorsan:
Although Khorasan is a ancient grain, its modern day revival is said to have started when a US Airman picked up a handful of the grain from a pyramid in Egypt at the end of WWII and sent it to a farmer friend in Montana.
Egyptologists claim the root meaning of the word Kamut is “Soul of the Earth.”

Khorasan flour is nutrient dense, containing a range of essential amino acids needed for enzyme production in the body.
