Organic Maize Meal
Organic Maize meal is produced by coarsely milling through the yellow maize grain (corn) into a medium textured meal.
It is often used as a gluten free replacement to wheat flour.
In the Kitchen:
Maize meal is commonly used to make pancakes, muffins and corn bread, though can also be used in gluten free cake recipes or for making maize biscuits (recipe coming soon).
A little about the origins of Maize:
It is said that the maize plant originated in the highlands of Southern Mexico around 9,000 years ago where the oldest varieties of surviving maize are still found. The Olmecs and Mayan people domesticated and cultivated maize varieties and by around 2,500 BCE it have spread through much of the Americas and then beyond into the African continent.

Maize meal is a good source of phosphorus, potassium, iron and chlorine. It also contains small amount of the B group vitamins. Maize is best consumed with other proteins such as beans, animal protein, chia etc to ensure a balanced diet.
