Organic Pine Nuts
Pine nuts are the delicious edible seed found within the cones of 20 different species of pine tree, of which there are five main commercial species. The most commonly gathered pine nuts in North America are from the pinyon (piñon) tree, Pinus monophylla. They have been used as a food source by Native Americans for many thousands of years.
Pine nuts are a rich source of phosphorus, a mineral used by the body to repair and grow tissues as well being involved in energy production. They are also a good source of magnesium, essential for over 300 different reactions in the body as in involved in blood sugar regulation, proper muscle contraction and bone integrity. Pine nuts also have a range of other nutrients including iron, copper and manganese.
Pine nuts are wonderful roasted and sprinkled on top of salads or roast vegetables (pumpkin is a winner), or traditionally used to make a delicious pesto.
Try a combination salad of baby spinach leaves with roasted pumpkin, capsicum and leek with toasted pine nuts and fetta.
Roasted pine nuts are also delicious sprinkled on homemade pizza.
