Flour bleaching started in the early 1900’s and was initially done to speed up the process of the flour being ready for consumption is usually done to make a flour appear whiter in colour as it’s natural appearance without bleaching has as yellowish tint.
Benzoyl peroxide and calcium peroxide are two of the most commonly used bleaching agents.
When flour bleaching began in the early 1900’s it was initially challenged by a gentleman named Harvey Wiley. Mr Wiley was the Head of the Bureau of Chemistry at the time and took the case to the supreme court to which he was successful, yet the law was never properly enforced and bleaching became common practice within the industry.
