Organic Wholemeal Cous Cous
Whole meal Cous Cous differs from traditional cous cous in that it comes not from semolina but from the flour of whole grain durum wheat, still with its endosperm and bran in tact. Wholemeal cous cous is a low GI food that is also low in fats. Easy to prepare, it can be eaten cold in salads, or warm alongside tagines, roast vegetables and herbs.
Serve alongside a delicious hearty casserole or use to make a seasoned stuffing for chicken or turkey.
Cooking Wholemeal Cous Cous:
Add 1 cup of cous cous to a bowl along with a tablespoon of extra virgin olive oil. Pour over 3/4 cup boiled water (or stock if you prefer) and cover for 4-5 minutes. All water should be absorbed in this time. Fluff up your cous cous with a fork and add here some freshly diced herbs for flavour. Mint and parsley are our recommended favourites.

Wholemeal cous cous is a good source of protein, complex carbohydrates and fibre. Being closer to the original grain, it holds much of the original nutrition, boasting high levels of vitamins B1, B3, and B5, as well as being a rich source of many trace minerals including manganese, phosphorous, magnesium, iron and zinc. It is low in fat and a low GI food source. Low GI foods have been linked to more balanced blood sugar levels, disease prevention, increased energy and improved mood.
