Wild rice is a semi-aquatic grass seed native to north America. Interestingly when cooked it expands to 3 or 4 times its original size and can be very filling on eating. It goes well in salads and soups, and can also be ‘popped’ just like pop corn. Simply heat it up in a little oil and shake until it pops.
Due to its high fibre content, wild rice keeps your digestion flowing and also helps to maintain healthy cholesterol levels. It is a good source of vitamins and essential minerals including Vitamins A, E and C, zinc, phosphorus and folate. Wild rice is also a great source of protein and complex carbohydrates.
Cooking with Wild Rice:
For perfectly cooked wild rice add 1 cup uncooked Wild Rice to 3 cups of boiling water and simmer on low heat covered for up to 40-45 minutes or until the kernels puff open. Take off the heat and gently mix for a moment before simmering for another 5 minutes. Drain the excess liquid and enjoy hot!
